1. Description of the challenge

Each year, KVZ processes large volumes of fresh fruits and vegetables. Around 19 million kilos are not suitable for human consumption. While we work hard to reduce this number, there will always be unavoidable “cutting residues” – like pepper stems or zucchini tops.

For about 15 million kilos of these residues, we want to make the smartest sustainable choice:

  • Should we continue to use them as animal feed for local farmers, or
  • Should we switch to anaerobic digestion (biogas production)?
2. Expected outcome

Desired outcome challenge:  Map the process steps of both options Compare them based on measurable KPIs (CO₂ impact, costs, revenues, processed kilos, legal frameworks, investments) Provide a clear recommendation: Which option is the most sustainable and future-proof for KVZ?
